Our daughter Molly has a restricted diet (it is very easy to follow – we eat out a lot with Molly and it’s always okay), we need your chef to cook for her please.

Molly is delightful, generally very happy, and given the right environment can relax and enjoy her food.

She has a very rare (around 90 girls in the world), syndrome. Her food issues may or may not be related to that.

Molly CANNOT (must not) have these foods:- Any diary (milk, butter etc.), gluten (flour), tofu, pineapple, kiwi, berries (apart for blackcurrants), pulses (beans or lentils), soya, mustard, celery, cinnamon, pork or pork/ham products, shellfish, buckwheat, sulphites, preservatives or additives (no ‘E’ numbers), nuts, or Quinoa.

In hotels and restaurants it’s best if Molly eats lunch at around 1300/1330, and dinner at around 1830/1900. She can easily get agitated, and distracted so it’s better for her to have her food ready when she sits down if possible. It can take her a while to eat.

Molly has a problem with sudden noise, so if you can seat her away from kitchen doors, coffee machines etc., that is really helpful. She really struggles with hand dryers. She does not need to be seated in a ‘quite’ area, or a corner etc. she likes to be around people, and is very sociable.

If you have a ‘booth’ type of seating that works really well for her.

In college Molly eats at the standard mealtimes.

You’ll see below a full list of foods; and Molly enjoys these combinations:- [Molly LOVES Red Onion; pan-fried or roasted, and she’ll often eat the other food when there are red onions served with. So please serve it with each meal.]

  • Chicken (thigh, breast, leg) roasted or fired (can coat with rice Panko and egg white to bond), with roasted or fried red onions, broccoli/spinach, potatoes (chips fried in sunflower oil are fine or roast, boiled or boiled rice)
  • Lamb (shallow fried* or in a stew/broth), with roasted or fried* red onions, broccoli/spinach, potatoes (chips fried in sunflower oil are fine or roast, boiled or boiled rice)
  • Lamb or Beef burgers; minced meat, red onion, garlic, salt – very simple
  • Salmon (roasted, grilled, fried*), roasted or fried* red onions, broccoli/spinach, potatoes (chips fried in sunflower oil are fine or roast, boiled or boiled rice)
  • Beef (sirloin, bavette, rump, rib-eye), with roasted or fried* red onions, broccoli/spinach, potatoes (chips fried in sunflower oil are fine or roast, boiled or boiled rice)
  • White fish (Cod, Haddock, Pollock), with roasted or fried* red onions, broccoli/spinach, potatoes (chips fried in sunflower oil are fine or roast, boiled or boiled rice)

*when frying use only Olive Oil, Rapeseed Oil or Sunflower Oil.

MEAT and FISH

Lamb and beef (slow cooked or pan fried), chicken (pot roasted with some of the root vegetables is best, roast, poached or pan fired), turkey, cod, pollock, haddock, salmon (poached or pan fried in Olive Oil or Sunflower Oil).

VEGETABLES

Red onion (Molly LOVES onions). Steamed broccoli (her favourite green vegetable), Romanesque (half broccoli half cauliflower), spinach and curly kale. – Molly really likes broccoli and spinach, but not overcooked. Potatoes either roasted, chipped, steamed, baked, boiled or mashed. Cucumber, skin removed and cut into batons. Tomato, peeled, skin removed, de-seeded and cooked. She might also have swede, leek, sweet potato, courgette (skinless) and peas. Garlic, small amount.

FRUIT

Grapes, and some apple. She can have these fruits too, but does not like them much… pear, apricots (fresh or dried), peachnectarine, mango, raisins, blackcurrants, and banana which she is not very keen on. Blackcurrant jelly. Will try Apple and orange juice.

CARBS

Rice, gluten-free white bread (we use Warburton’s), rice or cornpasta (we can supply), RiceKrispies. CornFlakes, cornflour.

OTHER THINGS

Molly likes eggs (x2) for breakfast, with her bread toasted ‘crispy’. We supply her bread.

Sugar, golden syrup, dairy free/soya free chocolate (we supply), this is made with rice milk and rice flour. ‘Pure’ Sunflower dairy and soya free spread (we supply, needs storing in hotel fridge). Coconut Milk which can be used to make non-diary ice-cream. Egg, well cooked as part of another dish, for example Meringue. Molly loves meringue, especially broken up with some of her dairy free/soya free chocolate. Xanthan Gum which can be used as a rising agent and binder, can also use egg white. Herbs (Basil, Rosemary, Parsley, Fennel leaves and Chives), small amounts of salt and less pepper, Sunflower Oil, Olive Oil, baking powder, gelatine, peppermint.

For hotel visits we can supply rice and corn pasta, ‘Pure’ Sunflower dairy and soya free spread, and rice cakes.
